萝卜绿豆小丸子
我家乡有道很接地气的美食,老百姓很通俗地叫做“炸萝卜丸子”——用青萝卜擦成细丝,用绿豆面拌匀、调味,炸至外酥里嫩。虽是油炸食物,口味却清新独特。

现在有些餐馆,开始将这道菜纳入菜单,配上一碗酸辣汤,明其名曰“酸辣萝卜丸”,有菜、有汤,还能当饭,十分受欢迎。只是不知到底用没用到绿豆面。

看到市场上油绿鲜亮的青萝卜,突然特想吃这道萝卜丸,于是买回来炮制一番。

想来油炸食物总是不太健康,还是少油为好。于是又想起了压在箱底的章鱼烧模,用来煎个萝卜丸子,大概只要1大勺油就行了。

看着在章鱼烧模里翻滚的萝卜丸子,觉得接地气的百姓食物忽然多了不少“仙气”,顿时被自己的“创意”“折服”了,哈哈

  • 青萝卜200g
  • 绿豆面100g
  • 葱花20g
  • 1/2小勺
  • 五香粉1/2小勺
  • 鸡蛋1个
  • 50g
  • 食用油1大勺

Steps to make 萝卜绿豆小丸子

  • 1.青萝卜擦成细丝,加入盐、葱花和五香粉,拌匀;
  • 2.加入鸡蛋和绿豆面,再次拌匀;
  • 3.再加入清水,拌成略稠的稀糊状;
  • 4.中小火烧热小丸子模,均匀刷上一层食用油,油量比做小丸子多一些,大概总共1大勺左右;
  • 5.将面糊加入模中;
  • 6.待一面凝结后,翻面滚圆;
  • 7.如果感觉有点儿干,可以再加点儿油;
  • 8.煎至丸子周身金黄,即可出模,放在厨房纸上吸吸多余的油脂,即可。
