辣子鸡米线
今天做的辣子鸡米线,辣子鸡一般浇在米线上,另一半可以当菜吃,配上酸萝卜和油炸花生米,简直是美味无比!水煮米线的做法可以参考之前发的菜谱里水煮肉片的做法。米线云南米线或者江西湖南米粉都是可以的,看个人口味。

  • 鸡腿肉5个
  • 干辣椒很多
  • 生姜4-6片
  • 生抽1勺
  • 老抽2茶匙
  • 料酒1勺
  • 2茶匙
  • 0.5勺
  • 大蒜1勺
  • 豆瓣酱1勺
  • 鸡粉1茶匙

Steps to make 辣子鸡米线

  • 1.鸡肉切小块加生抽、老抽、料酒、盐、鸡粉、白糖腌制(用量参考上面的配料表),味道要一次性给足,后面不会再调味了。我用的是超市卖的已经剔骨去皮的鸡腿肉,当然最终配料的用量还是要根据你的实际情况进行调整的。
  • 2.准备干辣椒(用见到剪成大段),适量的花椒,我不太喜欢吃到花椒所以放的不多。一点大蒜和生姜。白菜是用来放米线里煮的,菜帮菜叶要分开。
  • 3.锅里入宽油,烧到7-8成热把鸡腿肉入锅中大火油炸8-9分钟,具体看你的鸡肉块大小,自己家做的鸡肉可以稍微切大一些,因为炸后会缩水,太小了不合适。
  • 4.炸到表皮金黄就可以出锅了。
  • 5.重新起过,倒入适量底油,放入花椒大蒜生姜一起中小火煸炒几下,出香味后加入辣椒。
  • 6.辣椒翻炒几下之后加入鸡肉一起中大火翻炒,翻炒时候会发现辣椒味越来越浓烈,等辣椒味散发很彻底,鸡肉变深 ,跟你平时在外面吃到的口感差不多,就是鸡肉开始微微有焦香时候就可以出锅了。
  • 7.这时候就已经是可以直接食用的辣子鸡啦。喜欢吃辣椒的人也会发现这个里面辣椒非常酥脆!很好吃。也可以撒上一把油炸花生米一起翻炒!更有滋味。
  • 8.炒辣子鸡的同时另起一个锅,放入适量油,把一些干辣椒和蒜小火慢慢爆香,然后放两大勺豆瓣酱中大火煸炒至油变红,接着放入白菜帮翻炒几下,加水,水开后把实现用水泡好的米线放进去,(如果你的米线成熟时间短,就晚点放)。等米线煮到八成熟后加入白菜叶,白菜叶软了之后就可以出锅了。
  • 9.连同汤一起倒入大碗中,放入刚才做好的辣子鸡适量。依据个人口味可以加入香菜调味。
  • 10.另外撒上花生米,陪着酸辣萝卜(前面有教程),一起吃!太美味了!!
