紫薯蛋黄桃山月饼
今年月饼有一多半做的都是桃山月饼,另一半是广式月饼。
两相比较之下,桃山月饼更容易操作,而且做出来的效果也更加出彩呢~

材料:
紫薯日式桃山皮150g,莲蓉馅150g,咸蛋黄6个

Steps to make 紫薯蛋黄桃山月饼

  • 1.将莲蓉馅取出
  • 2.用双手揉捏一会儿
  • 3.取一个蛋黄和莲蓉馅一起称重,30g为一组;依次将6颗蛋黄及相应的莲蓉馅称好备用;
  • 4.取一份称好的莲蓉馅,在中央按压出凹坑
  • 5.放入与其同组对应的蛋黄
  • 6.将莲蓉慢慢向上推进,均匀包裹住蛋黄
  • 7.直至包紧并封口
  • 8.依次将所有莲蓉及对应蛋黄都包好,搓圆备用
  • 9.取一份紫薯味桃山皮
  • 10.同样用双手揉捏一会儿
  • 11.将其分成每份20g重之后搓圆
  • 12.取一个紫薯皮用拇指在中央按压出坑状
  • 13.放入一个准备好的莲蓉蛋黄馅
  • 14.将皮慢慢向上搓,使其均匀的包住馅料
  • 15.直至最后包好并封口
  • 16.依次将所有皮、馅都包好
  • 17.摆放入烤盘
  • 18.将模具套在包好的饼坯外侧,向下按压出花型
  • 19.依次将所有饼坯都按压出花型
  • 20.表面薄薄的喷一层水
  • 21.送入预热好的烤箱中层,160度烘烤约12分钟
  • 22.出炉晾凉密封保存即可
