木垒羊肉焖饼——新疆味道
在木垒哈萨克自治县,说起小吃,那真是品种繁多,有哈萨克族的手抓羊肉,熏马肠、奶茶、酥油、包尔沙克;维吾尔族的抓饭、油馕、烤包子;回族的油香、凉皮、黄面、粉汤、揪片子、拉条子;汉族的切片子、哨子面、拨鱼子。但最值得一提的则是盛行于木垒地区的羊肉焖饼子。羊肉焖饼在普通百姓家经常都能吃到,在木垒的大小餐馆几乎都能吃到羊肉焖饼。
其实那羊肉焖饼,就是用羊羔肉烧出来来的(我一般就爱用羊排做,)加些新疆人爱吃的花椒粒等等调料,那饼子就是用拉条子面做的,擀得越薄越好,放进烧羊肉的锅里,加锅盖焖30_40秒捞起,切成小块,摆在烧好的羊排盘子里,薄薄的面饼层层不沾,看上去是油津津、黄澄澄,吃起来油不腻,香酥可口,嗅到其味,就会令人滴口水,真是色香味俱全。
羊肉性热、味甘,是适宜于冬季进补及补阳的佳品。医学认为,它能助元阳,补精血,疗肺虚,益劳损,是一种滋补强壮药。

    Steps to make 木垒羊肉焖饼——新疆味道

    • 1.材料: 小羊排 大蒜 姜 青红辣椒 花椒粒 酱油 大葱 干红辣椒 油盐 面粉 味精
    • 2.把面粉用温加盐合成光滑的面团,抹上一层植物油,用保鲜袋包好,醒面30分钟以上,这面和拉条子的面做法一样
    • 3.羊排切块
    • 4.羊排用凉水下锅焯水,捞起沥干水分
    • 5.大蒜去皮,大葱切段,姜切片,青红洗净切片
    • 6.热锅凉油,加羊排
    • 7.大蒜姜大葱花椒粒干红辣椒炒出香味,把羊排炒出水分
    • 8.加酱油翻炒均匀
    • 9.加水大火烧开
    • 10.转中火焖30分钟左右
    • 11.把面分成小剂子,擀成薄饼
    • 12.放进羊排锅里,
    • 13.加盖焖30——40秒左右,捞起薄饼,每个薄饼都这样做
    • 14.羊排焖快一小时后加盐青红辣椒片味精煮一会出锅
    • 15.把薄饼切成斜片
    • 16.摆在盘里,倒入焖好的羊排就好了
