酱炒茄子

  • 甜面酱20g
  • 1/2茶匙
  • 生抽少许
  • 绍兴酒1/2大匙

Steps to make 酱炒茄子

  • 1.茄子切条状后浸泡在水中,在水里撒1小勺盐,浸泡一会
  • 2.葱切成葱花,蒜切末,姜切末,豆豉用清水冲洗一下沥干
  • 3.将浸泡的茄条捞出沥干水分(最好用手用力拧干水分),锅中倒少许油润下锅,放入处理好的茄条,干煸至半软、半透状态时盛出备用
  • 4.锅中热适量油(刚刚处理过茄条,所以油可以少放一点儿),下入一半的蒜末和葱花,姜末,豆豉爆香
  • 5.然后放入甜面酱炒香
  • 6.下入茄条翻炒均匀,烹入绍兴酒,搁入糖,再翻炒均匀
  • 7.最后下入剩余一半的蒜末和葱花翻炒数下即可出锅
