云南土匪猪肝
名叫土匪猪肝,可不是土匪或者土匪吃的哦~
应该算是湘菜吧,不过到现在,已经被各地发扬光大了,我的家乡云南也经常做这道菜~

Steps to make 云南土匪猪肝

  • 1.猪肝从市场买回来的时候已经切好片了,回到家里用温水泡着,洗掉血水,漂洗后基本除去血水。
  • 2.葱切成葱段,蒜和姜切成1cm左右的丁,把干辣椒掰成两端。
  • 3.猪肝去掉血水之后,沥干水分。倒入10ml料酒、淀粉、酱油腌制20分钟。
  • 4.锅热至8分热,倒入油热锅。
  • 5.放入蒜丁、姜丁、干辣椒爆香。
  • 6.到干辣椒变色后,放入豆豉酱炒香。
  • 7.把猪肝滑入锅内翻炒1分钟左右,到猪肝变色,加入葱段,再翻炒1分钟左右。加入盐、味精调味即可。
