    Steps to make 回锅带鱼

    • 1.带鱼洗净切菱形小块,加白酒、料酒、胡椒粉、花椒、糖、盐腌制30分钟。(带鱼最好洗掉表皮的鱼鳞以去腥 ,盐的量要加足。)
    • 2.葱姜蒜切片,青蒜切段。
    • 3.腌好的带鱼先拍一层玉米淀粉。
    • 4.再拖一层鸡蛋液。
    • 5.炒锅上火,待油温四成热时下入带鱼块。
    • 6.定型后用小火煎制金黄,翻面。
    • 7.待两面都煎黄时,把火调大,吐出多余的油。
    • 8.盛出备用。
    • 9.仍用锅里的油小火将郫县豆瓣酱炒出红油
    • 10.下入葱姜蒜片、豆豉炒出香味。
    • 11.烹入料酒,加白糖、盐、老抽定好味。
    • 12.下入青蒜苗炒香后倒入带鱼块。
    • 13.轻轻翻炒均匀出锅即可。
