大米粑粑
米粑粑是武汉的一道名小吃,主要原料为大米,将大米磨成米浆,经过发酵,然后再放锅里煎至而成的一道美食,米粑粑外表呈金黄色,吃起来外焦里嫩,同时还有淡淡酒香味,正因为他的这些特性深受大家的喜爱。
记得小时候妈妈经常会做,那里还是用柴火锅煎至而成,味道更加浓郁,后来生活在大城市不方便磨大米,很少能吃至,一般要吃也只能通过买或去外面的饭店吃,来北京后更难得有机会吃,唯一能吃到的机会就是每年春节回去后到外面的饭店品尝一下。
去年开始就自己尝试在家做,最初因为没有破壁机打磨米粉或米浆不太方便,做出来的口感稍微差点,慢慢做的次数多了,而且有了破壁机研磨米粉,制作起来特别方便,随时想吃随时弄。

Steps to make 大米粑粑

  • 1.大米装破壁机杯中(大米可以提前用清水冲冼后沥干水份,不介意的可以直接研磨)
  • 2.破壁机接通电源,选择研磨功能
  • 3.50秒左右大米磨成米粉
  • 4.研磨好的米粉
  • 5.将大米粉倒入面盆中
  • 6.加入白砂糖、酵母、清水搅拌均匀
  • 7.盖上保鲜膜或盖子发酵至米浆表面出现许多孔洞并拌随有酒香味
  • 8.电饼铛烧热,用勺子舀一勺米浆,倒入电饼铛上,摊成圆形,米浆渐渐凝固,表面有气孔
  • 9.米粑粑底部出现焦黄,用铲子翻面煎另一面,两面煎焦黄出锅
