Steps to make Purple Potato Flower Mooncake
- 1. Cake making: Weigh the required materials and set them aside. (If there is no water, it can also be prepared in a 1:4 ratio of pure alkali and water)
- 2. Put syrup and water into the bowl, stir well, and then add corn oil.
- 3. Add cheese powder and stir well.
- 4. Sieve in the flour.
- 5. Use a scraper and cover the dough with cling film to wake up for about 2 hours.
- 6. Cut purple sweet potatoes into small pieces and cut open the surface of the chestnuts (the surface of the chestnuts is smooth, be careful not to scratch your hands). Steam in a pot until cooked.
- 7. Purple sweet potato puree, add corn oil to the pot, pour in the purple sweet potato puree, stir well, add sugar, and stir fry over low heat.
- 8. Add clarified flour and stir fry the purple potatoes until they can hold together and form a ball.
- 9. Let the chestnuts cool slightly and put them into a bag to press into mud.
- 10. Add corn oil to the pot, add chestnuts, sugar, and clarified flour, and stir fry over low heat. (The recipe is the same as purple potato filling)
- 11. Divide into a small ball of 56 grams for later use.
- 12. 24 grams of noodles, press into small pieces and wrap in purple potato filling.
- 13. Slowly tighten with a tiger's mouth.
- 14. Take two balls of purple potato filling and chestnut filling, press them into slices, and stack them in a staggered color.
- 15. Take the noodles and wrap them in the same way.
- 16. Sprinkle dry powder into the mold, shake it back and forth, remove excess dry powder, and put it into the prepared dough for lamination.
- 17. Put oil paper into the baking tray and directly demold it onto the baking tray.
- 18. Mickey Mouse Mooncake Making: Cookie mold (choose a thicker mold, other shapes are acceptable), like a mooncake, first make one large and two small mooncake embryos. (Size can be adjusted according to the mold)
- 19. Put it into the mold and sprinkle some dry powder on top. Convenient demolding.
- 20. Press the film and remove excess edges and corners.
- 21. Gently release the mold from the baking tray.
- 22. Small leaf production: Take a small heart-shaped mold and press it into shape.
- 23. Use a bamboo stick to adjust the shape of the leaves and press patterns on the surface of the dough.
- 24. Pumpkin making: Take a small amount of purple sweet potato filling, wrap the noodles well, (the noodles should not be too thin, as they are easy to break when pressed with bamboo sticks), stick a small piece of noodles onto the pumpkin, and make the handle of the pumpkin.
- 25. The bamboo skewers are shaped like rice and have pumpkin patterns pressed out.
- 26. Rabbit making: Wrap the dough in an appropriate amount of mooncake filling, make it into a mouse shape, and use scissors to cut out the rabbit's ears. After baking, use a bamboo skewer dipped in a little red food coloring to spot the rabbit's eyes.
- Preheat the oven at 200 degrees and bake for 5 minutes to set.
- 28. The smaller cartoon design is more familiar and can be taken out in advance.
- 29. Egg brushing solution: Mix chicken yolk and egg white in a ratio of 2:1, stir evenly, sieve out small bubbles.
- 30. Let the preforms cool slightly and brush with egg mixture. Then, bake at 170 degrees Celsius and 160 degrees Celsius for 20 minutes. When brushing, don't get too much egg liquid on it. Use a brush to scrape off excess egg liquid at the edge of the bowl to avoid damaging the texture.
