辣子鸡
辣子鸡是一道川渝地区的名肴,因缘于重庆歌乐山而得名。此菜成菜色泽棕红油亮,麻辣味浓。咸鲜醇香,略带回甜。一般以鸡为主料,加上葱、干辣椒、花椒、盐、胡椒、味精等多种材料精制而成,营养丰富,味道鲜美,虽然是同一道菜,各地制作也各有特色。

Steps to make 辣子鸡

  • 1.鸡腿一只,花椒和辣椒,
  • 2.葱、熟芝麻、 盐、味精、料酒、食用油、姜、蒜、白糖
  • 3.将鸡腿洗净改成丁放入碗中用盐、料酒码味,微炸成型。
  • 4.锅置火上,下同烧至七成热时,倒入鸡丁滑熟后,滗起待用。
  • 5.锅留底油至热,下红辣椒、花椒炒香,
  • 6.倒入鸡腿,烹入料酒,簸匀加入盐、味精、胡椒、白糖、醋、烹入鲜汤炒至鸡丁回软。
  • 7.汁干时,下青椒和小葱簸匀起锅即成。
