Steps to make 家常蒸肉丸

  • 1.准备食材:猪肉馅:500g
  • 2.五香粉:1小勺;十三香:1小勺;白胡椒:1小勺;甜面酱:1勺;料酒:适量;香油:适量;盐:5g;淀粉:适量;馒头渣:大约四分之三个馒头,去皮后切碎搓成渣;葱末:适量;姜末:适量;酱油:3-4勺。
  • 3.白菜:选嫩叶子的部分数张。
  • 4.肉馅中加入料酒、酱油,搅打调匀。
  • 5.加入姜末,继续搅打。
  • 6.加入五香粉、十三香、白胡椒,搅打调匀。
  • 7.肉馅打水。每次打水量不要过多,打水后搅打上劲时再次打入水。
  • 8.反复打水几次,直至肉馅粘稠上劲儿。
  • 9.加入甜面酱,搅打均匀。
  • 10.加入葱末,葱末上淋入香油,搅打均匀。为什么此时才放入葱末,且要在葱末上包裹香油再进行搅打呢?因为过早的放入葱末,搅打时间过长,就会激发出葱臭味。在此时放入葱末并用香油包裹,目的就是为了锁住葱香味,成熟丸子的味道会更好。
  • 11.加入盐,搅打均匀。
  • 12.加入淀粉、馒头渣,继续搅打均匀。
  • 13.在容器中铺上嫩白菜叶打底,将肉馅团制出大小均匀的小丸子,放在白菜叶上,准备蒸制。因为是过年,我多作了些。这个菜谱是按500g肉馅配的方子。如果您也想多作些,可按比例加大主、配料。
  • 14.蒸锅上汽后,40分钟制熟。出锅后趁热将丸子分离,防止冷却后丸子相互粘连(END)。
  • 15.作个醋和香油的小蘸料。充分吸收了肉丸油脂的白菜叶蘸上小料,吃起来那叫一个爽口。小丸子蘸上小料还能吃出螃蟹的味道。
  • 16.除了蘸小料的吃法,还可以用熘、扒的方法进行二次加工,作出各式小丸子。
