土耳其式凉拌茄块
天气转暖,新鲜茄子、青椒上市,正好可以做我很喜欢的凉拌茄子了。嫩茄子切块和配料一起炸熟,浇上番茄酱拌匀,再冷藏几个小时,等茄块吸足酱汁的味道后即可享用。这道菜茄香浓郁,酸中微甜,既可作为开胃头菜,也可作为下酒小菜。

  • 青椒两个
  • 西红柿一大个
  • 大蒜5-6瓣
  • 橄榄油1/2水杯
  • 白糖1勺
  • 苹果醋1勺
  • 色拉油1/2水杯

Steps to make 土耳其式凉拌茄块

  • 1.茄子削去两侧的皮后切成块。
  • 2.加1勺盐腌制10分钟后挤出水分,再用厨房纸吸干表面。
  • 3.青椒去籽后切块。
  • 4.西红柿削皮后搓成泥。
  • 5.留下一瓣剥好的蒜瓣,其余切蒜末。
  • 6.锅中加入橄榄油和色拉油。油7成热后下茄块炸透至焦黄。
  • 7.沥油捞出。
  • 8.继续炸青椒和一瓣蒜至微黄。
  • 9.沥油捞出,倒入茄块中。
  • 10.锅中加两大勺橄榄油。油微热后加入蒜末炒香。
  • 11.加入番茄泥炒匀。加盐、白糖、苹果醋调味。
  • 12.中小火熬至浓稠。
  • 13.将酱汁倒入茄块中。
  • 14.拌匀后放入冰箱冷藏2个小时以上后食用。
