香辣火焙鱼
春暖了,花开了,孟子湖里打渔的人又开始忙碌了。每天清晨,孟子湖边的打渔人从船舱里提出大大小小的各种鲜鱼,摆在堤坝上叫卖。鱼是湖里野生的,活蹦乱跳水淋淋的透着新鲜,因此,渔家的生意特别的好,有晚去的人买不到鱼,就会和渔家定制明早的鱼。

    这里有种小鱼,叫做“穿条”。这是一种长不大的鱼,其体型细长,鳞细,肉嫩,因其爱贴着水面游动穿行,因此邹城人把它叫做“穿条”。关于这种鱼的吃法,邹城传统的就是把“穿条”胣好后腌渍入味,裹面糊油炸了吃。炸好后的“穿条”,外皮焦稣,鱼肉细嫩,连细小的鱼刺也可以咀嚼了吃。

    把这种小鱼干煎后再用辣椒等炒制了吃,是我喜欢的也是习惯的方子,偶然看到美食网站把这干煎鱼的吃法叫做“火焙鱼”,但这种做法离“火焙鱼”的传统方子相差太多。

    Steps to make 香辣火焙鱼

    • 1.小鱼胣好清洗干净,晾干水分。
    • 2.洒入少许精盐。
    • 3.腌渍30分钟。
    • 4.青红尖椒洗净切碎,小葱香菜洗净后切段,生姜切片。
    • 5.煎锅里倒入少许油,把小鱼码放整齐。
    • 6.小火煎制两面金黄,熥干盛出。
    • 7.锅里倒入植物油,油热后放入姜片,豆豉炒香。
    • 8.倒入青红椒碎,小葱段炒香。
    • 9.倒入小鱼,小火翻炒。
    • 10.调入少许的精盐,洒上香菜段,翻炒均匀。
