Steps to make 自制腊肉

  • 1.原料:五花肉、生抽、老抽、高度白酒、食盐八角。
  • 2.老抽、生抽、食盐、冰糖(冰糖砸碎)、白酒、八角放在大碗中混合均匀,调成腌料汁。
  • 3.调好的腌料汁倒入五花肉中拌均。盖上保鲜膜,放入冰箱冷藏室腌制两三天(中间多翻动,使猪肉入味更均匀).
  • 4.腌制三天五花肉取出,放在阴凉通风处阴干,这是第三天,肉质稍稍收紧。
  • 5.第五天,肥肉部分开始泛油。
  • 6.第八天,五花肉更紧致。颜色也更深了。
  • 7.取一块洗净,放盘上,入蒸锅蒸1小时。
