Steps to make 菠菜泥蛋糕卷

  • 1.准备好食材,菠菜去梗留叶,用开水焯一下,取60g入料理机内打至细细的泥。
  • 2.蛋黄四枚,加入细砂糖20g香草精2滴,打均匀
  • 3.加入玉米油60g打均匀
  • 4.加入菠菜泥60g搅打均匀
  • 5.筛入玉米淀粉搅打均匀
  • 6.筛入低筋面粉
  • 7.用打蛋棒“J”字拌均匀,至无颗粒的面糊这时烤箱预热160度上下火
  • 8.四枚蛋白加入柠檬汁(白醋)两滴打至鱼眼泡加入20g细砂糖
  • 9.用电动打蛋器打至浓稠,加入20g细砂糖
  • 10.打至微出纹路加入20g细砂糖
  • 11.打至大弯钩状态
  • 12.1/3蛋白霜分两次加入菠菜泥蛋糊内翻拌均匀一次加入
  • 13.二次加入拌均匀
  • 14.将拌好的菠菜泥蛋糊倒入蛋白霜内
  • 15.快速轻柔的翻拌切拌均匀,注意手法哈,不要画圈。
  • 16.烤盘内铺硅油纸边角剪口折整齐,倒入拌好的蛋糕面糊
  • 17.抹平表明,震出大气泡,即可入预热好的烤箱内烘焙。
  • 18.烘焙:160度上下火中下层烘焙25分钟。烘焙好的蛋糕卷胚表明不粘手,富有弹性,按压下会弹回来。可以用牙签扎入蛋糕体内拔出牙签无残留物就证明熟了。
  • 19.烘焙好的菠菜泥蛋糕卷胚放在烤网上,晾温。去除油纸
  • 20.蛋糕胚放在油纸上,蛋糕卷卷起的一端用刀划出三道,利用擀面杖将其卷起。定型,可以冷藏后切块食用~
