  • 蛋黄300克
  • 蛋清1200克

  • 1.奶油奶酪加部分牛奶隔水加热
  • 2.打至顺滑
  • 3.分次加入剩下的牛奶,打至顺滑
  • 4.加入淡奶油,打顺滑
  • 5.黄油融化,倒入芝士糊打至顺滑
  • 6.加入蛋黄搅拌均匀
  • 7.加入柠檬汁搅打均匀
  • 8.筛入低筋面粉和淀粉搅拌均匀
  • 9.将搅打顺滑的芝士糊过筛备用
  • 10.蛋白分次加入白砂糖打至提起打蛋器,打蛋器挂起弯勾稍过一点,不到干性发泡。将打好的蛋白取一部分放入芝士糊翻拌均匀
  • 11.翻拌均匀的面糊倒回蛋白霜,再次翻拌均匀
  • 12.模具抹一层薄薄的黄油
  • 13.将芝士糊倒入模具,模具放入烤盘,在烤盘内注入清水,水浴法烘焙
  • 14.烤箱预热180度烤20分钟,转120度再烤50分钟,烤好后打开烤箱门放置一会再出炉。
