Steps to make 莲藕羹

  • 1.1节莲藕清洗干净去皮备用。做莲藕羹的藕建议大家选择一整根莲藕靠后面的一节。因为后面的几节莲藕粉比较多,适合用来煮汤或是做莲藕羹。如果是清炒莲藕,则选择第一节,最顶端的那节莲藕脆甜,比较适合凉拌或是清炒。
  • 2.莲藕切小块,放清水里冲洗一下。
  • 3.莲藕里加少许清水放入料理机里打成泥。
  • 4.将莲藕泥放入锅里,加入3碗清水。清水加的太少了,莲藕羹会特别粘稠,像稠浆糊,口感不大好。太稀了也没有那种顺滑的口感。大家在做的时候掌握好水量。
  • 5.煮至沸腾。在煮的过程中,莲藕羹会变得越来越粘稠,在煮的过程中需要不停的搅拌。
  • 6.煮好的莲藕羹加入2勺糖桂花调味,然后在撒少许干桂花提香气。糖桂花就是桂花酱,比较甜又有桂花的香味,放到莲藕羹里味道很好。也可以根据个人口感加入玫瑰酱。
