胡萝卜含有大量胡萝卜素,胡萝卜素在人体内能转化为维生素A,有抗癌保健作用,所以被称为益寿之菜。把胡萝卜与肉类混合做馅,动物油脂会提高胡萝卜素的吸收率。由于胡萝卜有种特殊味道,有些人不喜欢,把胡萝卜混在馅里,肉的味道能有效“掩盖”这种胡萝卜味儿,这样,营养和口味可以兼得。

  • 酵母4克
  • 温水250克(根据面粉吸水性增减)
  • 猪肉300克
  • 胡萝卜200克

Steps to make 胡萝卜肉包

  • 1.准备好肉馅所有食材。将猪肉、胡萝卜剁碎。
  • 2.锅里倒些油,放入胡萝卜,加入适量盐,炒熟。
  • 3.将肉与胡萝卜放入碗里,加入适量水、植物油、盐、鸡精、蚝油、十三香,顺一个方向搅拌均匀备用。
  • 4.面粉与酵母粉混合,慢慢倒入温水,边倒边用筷子搅拌成絮状。
  • 5.将面团揉至表面光滑,盖上盖子或保鲜膜,置温暖处发酵至二倍大。
  • 6.食指沾上面粉,在中间戳个洞,洞口不塌陷不回缩,扒开面团中间能看到里面已经成了蜂窝状,就发酵好了。
  • 7.将发酵好的面团揉匀至表面光滑,切成大小相当的面剂子,切开的面剂子切面处无明显气泡。
  • 8.将小剂子擀成包子皮,包入胡萝卜肉馅。
  • 9.包好包子后,放在铺有屉布的蒸笼上,中间要有间隔,因为蒸的时候还会变大。二次醒发20分钟(根据温度调整醒发时间)至二倍大。
  • 10.大火将水烧开,中火蒸20分钟关火,焖5分钟后再揭开锅盖。
