家庭制作乌冬面“上汤鸽皇乌冬面”
“上汤”即为好汤的意思。它泛指,用上好的原料煲或炖的时间够久的浓汤才能称之为“上汤”,这是南方尤其广东一带对好汤的称谓。而北方叫做“清汤”或者“高汤”。
今天,就用我昨天制作的鸽汤来做一款面食,而鸽汤要比一般的鸡汤鲜美多了,也可称之为上汤,因此这道面就叫做“上汤鸽皇乌冬面”。“皇”在粤菜里指的是好的食材之意,比如,选几种上好的食材炒一碟小菜,例如,小炒皇等。而我做的是一碗乌冬面,里面放了一些鸽肉,味道十分鲜美,因此把它叫做“鸽皇“。这道面的做法如下;

  • 小麦强力粉200克
  • 清水90ml
  • 熟鸽肉50克
  • 蟹棒25克
  • 香菇20克
  • 冬笋片20克
  • 包心菜100克
  • 甜玉米粒20克
  • 青豆20克
  • 1克
  • 鸽汤400ml
  • 胡椒粉少许

Steps to make 家庭制作乌冬面“上汤鸽皇乌冬面”

  • 1.面团制作;强力粉里放入盐拌匀。
  • 2.然后用清水和成硬面团儿。
  • 3.面团和好略松弛10分钟。
  • 4.把松弛好的面团用压面机反复滚压数遍,直至把面压至细腻为止,然后出条。
  • 5.面条要略粗一些为好。
  • 6.然后锅中水烧开下入面条煮熟。
  • 7.把煮熟的面条捞入碗中,然后再把配料用锅中的开水焯熟倒入面碗里。
  • 8.把鸽汤烧开浇在面条上。
  • 9.上面摆放上熟的鸽肉、冬笋片和香菇,然后便可食用。
