  • 牛奶300克
  • 1000克
  • 烘焙碱30克
  • 8克
  • 酵母4克

Steps to make 德国碱水面包

  • 1.将所有材料一起搅拌。
  • 2.搅拌至面团表面光滑有弹性。
  • 3.立即分割成60克一个滚圆松弛20分钟。
  • 4.将面团拍平。
  • 5.卷成圆柱形。
  • 6.搓至25cm长条形,中间稍微粗点。
  • 7.交叉绕起。(如图)
  • 8.绕成圆形,放入烤盘,以温度30℃,湿度75%,发酵四十分钟。
  • 9.放入冰箱冷冻20分钟。(冷冻的目的,防止面包变形,冷冻的面团能充分吸收碱水。)
  • 10.放入碱水里面侵泡40秒左右。
  • 11.捞出放入烤盘,表面划上刀口。
  • 12.撒上烘焙盐。
  • 13.以烤箱温度220℃,烘烤12分钟左右。(出炉在面包表面喷上水分,喷水让面包更加有光泽度)
