百香果酱磅蛋糕
“百香果”,又叫“西番莲”,是一种热带水果。据说它含有一百种水果的香味哦~~哈哈,这么说可能有些夸张了。但是,它的香气真的很复杂!切开后,我的第一感觉是芒果的香气,然后觉得是菠萝,接着又觉得像是橙子?香蕉?苹果?柠檬?所以说,“百香果”这名字,倒也算是名副其实呀!

我本身是一个嗜酸的人,一直也觉得像柠檬,百香果这些酸味较重的水果,用来制作磅蛋糕,是绝好的搭配。水果的香气和酸味,既能中和了大量黄油带来的油脂感,同时也让蛋糕的风味独特而浓郁。即使是现在这种高温天气,也能让你吃的停不下口呢!

  • 鸡蛋3个(带壳总重180g左右)
  • 百香果酱40g
  • 发酵黄油100g
  • 糖粉60g
  • 一小撮

Steps to make 百香果酱磅蛋糕

  • 1. 准备好全部原料,黄油提前解冻,低筋面粉与盐混合,提前过筛2~3次。鸡蛋也要保持室温;
  • 2.黄油软化到用手指能够轻易的按出痕迹后,加入糖粉,先用刮刀压拌一下,基本混合均匀后,再用打蛋器搅打至体积膨胀,颜色发白,呈现轻盈的羽毛状;
  • 3.蛋液提前打散,然后分次将蛋液加入打发好的黄油中,每一次都要等到前一次加入的蛋液与黄油糊完全混合均匀后再加下一次;
  • 4.最后打发好的黄油鸡蛋糊,应该痕迹清晰,体积膨大,状态轻盈,不会出现油水分离的状态;
  • 5. 烤箱预热165度。在黄油鸡蛋糊中加入百香果酱;
  • 6.用刮刀拌匀
  • 7.筛入低粉和盐的混合物;
  • 8. 用刮刀翻拌均匀,蛋糕糊就做好了。此时的蛋糕糊,应该浓稠细腻且有光泽,有些类似打发至5~6分发的淡奶油;
  • 9.将蛋糕糊装入模具中。我做了一个兔子家的mini磅蛋糕模,4个小4寸的硅胶模;
  • 10.预热结束后,将模具送入烤箱,中层,上下火,160度,烘烤25分钟左右。由于两种模具大小不同,所以我是烘烤到10分钟左右,再将硅胶模具送入烤箱的;
  • 11.另取一些百香果酱,加少许温水化开,即成刷面糖水。待烘烤结束后,立即将蛋糕取出,脱模,趁热刷上糖水。糖水要一遍遍的刷,尽量多刷一些;
  • 12. 待其完全冷却后,密封冷藏。2~3天后食用最佳,至少也要隔夜。
