五香麻辣锅巴

Steps to make 五香麻辣锅巴

  • 1.在装一碗半的剩饭的盆中加一勺盐,一大勺麻辣鲜,一勺花椒粉,一勺半五香粉,一勺剁椒拌匀。
  • 2.加少许澄粉(加澄粉主要是起粘合作用,最后炸出来的锅巴也是半透明的,非常漂亮),适量面粉,用洗干净的手和成软硬适中的饭团。
  • 3.面板上抹上食用油,用擀面杖把饭团擀成薄片,越薄越好。
  • 4.把边缘用刀修整整齐,再切成我们自己喜欢的方块。
  • 5.锅中加油,烧到六成热时,把饭片放进去炸到金黄酥脆捞出。全部炸好以后,油温升到八成热时,再把锅巴放进去炸十秒到十五秒时间捞出。
