甲鱼,学名鳖,俗称水鱼、团鱼和王八等,鳖肉具有鸡、鹿、牛、羊、猪5种肉的美味,故素有“美食五味肉”的美称。它不但味道鲜美、高蛋白、低脂肪,而且是含有多种维生素和微量元素的滋补珍品,能够增强身体的抗病能力及调节人体的内分泌功能,也是提高母乳质量、增强婴儿的免疫力及智力的滋补佳品。甲鱼营养丰富,含有蛋白质、脂肪、钙、铁、铜、动物胶、角蛋白及多种维生素,因甲鱼的种类和生活地区的不同,其营养成分不尽完全一致。甲鱼肉含蛋白质、脂肪、碳水化合物、灰分、镁、钙、铁、磷、维生素A、维生素B1、维生素B2、尼克酸、硫胺素、核黄素。鳖的脂肪以不饱和脂肪酸为主,占75.43%,其中高度不饱和脂肪酸占32.4%,是牛肉的6.54倍,罗非鱼的2.54倍,铁等微量元素是其他食品的几倍甚至几十倍。

Steps to make 冬补---甲鱼母鸡汤

  • 1.把甲鱼宰杀,洗净,剁块,老母鸡剁成大块。
  • 2.锅里放水,鸡放到里面焯水。
  • 3.甲鱼放到开水里焯水备用。
  • 4.把焯过水的鸡和甲鱼一起洗净放到沙锅里。
  • 5.加入红枣,枸杞,当归,黄芪,葱,姜。
  • 6.用大火烧开,撇去浮末。
  • 7.改小火炖约1个半小时,汤浓肉烂就好了,加盐,鸡精调味。
