清明节后,堂弟还在北京时,就说要做蔓越莓饼干,提前一天我和堂弟坐在餐桌前将蔓越莓干挑拣出来,洗净晾干。可天有不测风云,第二天因家里地板突然局部地区重新铺设,没能成行。
又到了公众假期——五一,因我不喜硬曲奇,隧将之做成了蔓越莓软曲奇。堂弟吃不到了,五一当天去姑姑家,让姑姑品尝吧!

  • 红糖40g
  • 热水50g
  • 植物油50g

Steps to make 蔓越莓软曲奇

  • 1.40g红糖用50g热水溶化,晾凉;
  • 2.在大些容器中先倒入50g植物油,再倒入已经放凉的红糖水,最后加入1g的盐,搅拌均匀;
  • 3.100g低筋面粉和3g泡打粉过筛,直接筛入刚刚搅拌均匀的液体容器中;
  • 4.将面粉与液体充分搅拌,成面糊状;
  • 5.加入蔓越莓干,拌匀;
  • 6.将面糊用裱花袋或小勺挤在烤盘上,尽量呈圆形;
  • 7.将之送入预热至180摄氏度的烤箱中,中层,上下火,12分钟。
