栗蓉月饼
栗子中不仅含有大量淀粉,而且富含蛋白质、维生素等多种营养元素,素有“干果之王”的美称。栗子味道香甜可口,肉质美味,是一种价廉物美、富有营养的滋补品及补养的良药。自制了点栗蓉馅,做了月饼!

  • 中粉100克
  • 转化糖浆70克
  • 葵花子油30克
  • 枧水2克
  • 板栗仁500克
  • 黄油100克
  • 白砂糖60克

Steps to make 栗蓉月饼

  • 1.板栗仁放入电饭煲里加适量清水炖煮
  • 2.这是我煮了1个半小时的
  • 3.把熟的板栗仁过筛,或者像我一样用料理机搅打成泥(看情况要加点水才能搅打完成)
  • 4.锅中加入适量黄油和砂糖,加入板栗泥
  • 5.翻炒均匀
  • 6.直到你要的状态,这就是栗蓉馅,实际用了250克,板栗馅有剩下哦
  • 7.制作饼皮:容器内倒入糖浆,加入枧水拌匀
  • 8.加入玉米油拌匀
  • 9.把过筛后的面粉的倒一半用刮刀拌至均匀无颗粒,再倒入剩下的面粉
  • 10.翻拌均匀后,装入保鲜袋里放入冰箱冷藏1小时以上
  • 11.把自制栗蓉馅分成每个30克左右搓圆
  • 12.把冷藏后的饼皮也分成10份,每份20克左右
  • 13.取1个饼皮压扁,放上栗蓉馅
  • 14.慢慢包起来,记住用虎口慢慢推,包裹均匀,最后揉圆
  • 15.放进面粉(材料外)中滚一下,让表面沾上面粉,取出时再抖掉多余的粉
  • 16.将月饼坯装入模具中
  • 17.在烤盘上压制花型
  • 18.送入预热好200度的烤箱中层烤5分钟
  • 19.定型后刷上薄薄的一层蛋液
  • 20.再放入烤箱180度烤15分钟至表面上色即可
  • 21.放凉后密封保存2天左右让月饼回油即可食用
