长乐冰饭
冰饭是福建省福州市的传统名小吃,属于闽菜,该菜品诞生于20世纪80年代,起源于福州长乐区,由福州传统解暑饮料“冰水”演变而来。是福州地区,夏季民众的一道解暑甜品。

Steps to make 长乐冰饭

  • 1.紫米提前浸泡2个小时。紫米又叫紫糯米,属于糯米类。有益气补血、暖胃健脾、滋补肝肾等功效,紫米比糯米软糯,做冰饭更好吃。紫米一斤9元,会比白糯米贵些,自家吃就用好的。
  • 2.紫米蒸熟放凉,做法参照我之前发的“木桶饭”做法。
  • 3.用南瓜、红薯和紫薯做芋圆,上锅蒸熟,加木薯粉和成面团。必须是木薯粉,做出来才会Q弹有嚼劲。
  • 4.这是做好的红薯芋圆,具体做法以后有空再发。
  • 5.锅里烧点清水,水开后倒入芋圆,轻轻搅散防止粘锅。煮至芋圆飘浮即可出锅。
  • 6.芋圆捞出过凉水备用,芋圆QQ弹弹,很有嚼劲。
  • 7.这是提前半天就准备的冰水,用黄冰糖泡的,放在冰箱冷藏,也可以是蜂蜜、白糖。
  • 8.所以食材准备好就可以吃啦。西瓜和红心火龙果去皮切成小块,西瓜最好选用无籽西瓜。粉红色的是“梅舌”,用白萝卜加糖和食用红色素腌渍的,福州长乐地区做礼饼、八宝饭、芋泥等会放梅舌。
  • 9.拿一个碗,先装紫米饭,再依次放入芋圆、花生仁、葡萄干、梅舌、西瓜、火龙果等,喜欢吃什么就加什么。
  • 10.成品。颜色鲜艳,材料丰富,冰凉爽口,炎热的夏天来一碗冰饭,非常舒服。
