鲜玉米蒸发糕
每年都忍不住想做这鲜玉米的发糕。每当听到街边叫卖的“嫩玉米馍馍”,就心痒痒地蠢蠢欲动。
鲜玉米发糕,用金黄香甜的水果玉米,做出来的发糕颜色好看,味道也甜。喜欢原汁原味的,可以什么也不加,只用玉米磨浆,直接蒸熟,最是简单。不过,这样的玉米发糕吃起来口感总还是粗了一丢丢。加入鸡蛋面粉,吃起来就松软许多。后来的之后,便延续了鸡蛋面粉的添加模式,比较适合牙口以及消化功能不太好的人群。但面粉鸡蛋的加入会冲淡玉米的甜味,加了一些糖,让甜味显得明显一些。
玉米的香味和颜色,总是那么诱人。

  • 1.用料:鸡蛋1个,中筋粉75克,玉米粒200克,无铝泡打粉5克,糖50克。
  • 2.将玉米粒,鸡蛋,糖一起倒入料理机。
  • 3.反复搅打成浓稠浆糊状。
  • 4.倒入大碗。
  • 5.面粉和泡打粉混合,筛入玉米糊中。
  • 6.拌成均匀糊状。
  • 7.装入马芬杯,七八分满。
  • 8.放入沸腾的蒸锅中,大火蒸15分钟左右。
  • 9.熟透,熄火,揭盖。
  • 10.出锅。
  • 11.立即脱模,置晾架上晾凉。
