紫薯酥皮蛋黄月饼
这两天总算有空了,抽出时间动手做了次酥皮的月饼,这次用紫薯和红薯做的,刚开始的时候就做错了,紫薯该是煮的,我做成蒸的了,在和面的都混合不到一块,最后用筛子慢慢筛细的才算完事,再和水油面时又和的硬了,最擀的时候都破皮了,唯一庆幸的是味道吃起来还OK。。

  • 水油皮:普通面粉150g
  • 水油皮:糖粉40g
  • 水油皮:猪油60g
  • 水油皮:水60g
  • 油酥:普通面粉130g
  • 油酥:紫薯泥40g
  • 油酥:猪油80g
  • 馅儿:紫薯250g
  • 咸鸭蛋5个
  • 红薯250g

Steps to make 紫薯酥皮蛋黄月饼

  • 1.紫薯,红薯煮熟,趁热捣成泥,在锅中倒入适量的油,分别炒干后,紫薯的可以加适量的蜂蜜搅拌下。
  • 2.油酥里倒入紫薯泥40g。
  • 3.搅拌均匀,过筛下。
  • 4.在倒入猪油和均匀。
  • 5.水油皮里除之外的材料揉下,再慢慢的加入水,和成和油酥面的软硬程度一样。
  • 6.用保鲜膜盖住,醒30分钟。
  • 7.做50g的,咸鸭蛋分成2半,紫薯,红薯揉成一个20g的馅,包上半个蛋黄。
  • 8.油皮分割30g一个揉成团,酥皮分割成一个20g的揉成团。
  • 9.8个包蛋黄馅的,其余的包紫薯或红薯馅的。
  • 10.取一个油皮面按扁放上油酥面包住。
  • 11.擀长。
  • 12.卷起来。
  • 13.再擀长。
  • 14.再卷起来,从中间切成2半,按扁,擀成圆片。
  • 15.用手再揉几圈就好了。
  • 16.放入烤箱,180°烤20分钟就好了。
