Steps to make 鸡蛋炒蛤蜊

  • 1.蛤蜊肉清洗两遍,
  • 2.都是整个的肉,需要处理一下
  • 3.去除沙包,
  • 4.去掉呼吸的肺叶,然后再清洗干净。
  • 5.用网筛盛蛤蜊,在开水中浸5--10秒立即出水
  • 6.香葱切末,打入鸡蛋,加胡椒粉和5克的黄酒
  • 7.搅拌均匀。
  • 8.锅中放油,炒香葱姜末
  • 9.放入蛤蜊,同时加10克的黄酒和盐,快速翻炒几秒钟
  • 10.倒入鸡蛋,煎至蛋液凝固即可。煎的时候可以翻炒,让蛋成块即可,火不要太大,中小火即可,以免把蛋煎老了
  • 11.煎好后装盘上桌
