脆底小面包
工作繁忙,加上连日的暴雨,一个月也没做几次面包,趁着难得一个大天晴的日子,做了这香软的脆底小面包,给自己也放个假咯!

  • 面包粉220克
  • 95克
  • 鸡蛋1个
  • 白砂糖45克
  • 黄油18克
  • 酵母4克
  • 1克
  • 低筋面粉20克
  • 白砂糖10克
  • 芝麻5克
  • 玉米油5克
  • 食用油20克

Steps to make 脆底小面包

  • 1. 主配方中所有的材料放入面包桶中,酵母放面粉上,黄油放一侧角落,启动面包机和面28分钟
  • 2.和面完成,拉一个手套膜,出膜的面包更松软更好吃
  • 3.收圆面团,继续发酵20分钟
  • 4. 辅料配方中除模具用油外,所有材料混合均匀成脆底料
  • 5.发酵完成,取出轻轻按压排气
  • 6. 面团分成6等份,排气滚圆,盖上保鲜膜静置15分钟
  • 7.模具底部放入少量的植物油
  • 8.取一个面团擀成牛舌状
  • 9.从上往下卷起来(方向从下往上卷也可以的)
  • 10.用面团分割板把面团切成2段(不要用刀直接在硅胶垫上切面团)
  • 11.切面沾一点水,然后沾一层脆底配料
  • 12.把所有的小面团沾好脆底料以后放入模具里,进烤箱发酵40分钟(多出来的脆底配料可以继续放到模具里,)
  • 13.面团发酵到满模,取出刷一层薄薄的蛋液,同时预热烤箱上火120度,下火160度
  • 14.面团上撒上适量的白芝麻,放入烤箱底层,上火120度,下火160度烤20分钟
  • 15. 面包烤熟后脱模取出放凉, 圆圆滚滚的小面包,软软的萌萌的
