Steps to make “蟹黄”虾仁豆腐煲

  • 1.虾仁处理干净,加入胡椒粉和料酒抓匀,腌制10分钟。
  • 2.咸鸭蛋洗净,取三个蛋黄(有一个是双黄蛋),一个蛋白。分别放入碗中入锅中蒸8分钟。
  • 3.蒸好的咸蛋白切碎。
  • 4.蒸好的咸蛋黄压碎。
  • 5.嫩豆腐洗净,切块。
  • 6.砂锅烧热,倒入油,放入姜片炒出香味。
  • 7.放入咸蛋黄翻炒,边炒边用铲子压碎。
  • 8.炒至咸蛋黄出油。
  • 9.加入适量料酒和开水。
  • 10.放入嫩豆腐和咸蛋白碎,轻轻搅匀,盖盖,小火煮5分钟。
  • 11.加入少许青豆,虾仁,再盖盖,小火煮5钟。
  • 12.关火后,撒入葱花。
