豌豆酸奶慕斯蛋糕
谷优的消化饼饼干,是一种多用途的饼干,直接吃~没有不会的,换种方式吃,玩烘焙的~喜欢用它做蛋糕的底或装饰,特别是夏天,不用开烤箱烤蛋糕底,直接用来做慕斯蛋糕的底托,方便快捷。

  • 消化饼干110克
  • 细砂糖50克
  • 吉利丁4片
  • 无盐黄油20克
  • 炼乳20克
  • 糖粉少许

Steps to make 豌豆酸奶慕斯蛋糕

  • 1.自制的原味酸奶先过滤,全部倒入布袋中,放入冰箱冷藏过滤一夜;
  • 2.准备所有的材料,过滤后的酸奶大约有500g左右;慕斯框用锡纸托住底部,大小是14*14;吉利丁3片用冰水浸泡,或者用凉水浸泡放冰箱冷藏中;
  • 3.消化饼饼干80g装入保鲜袋中,用擀面杖捣碎,黄油微波炉融化,倒入饼干屑中,隔着袋子柔和均匀;
  • 4.混合后的饼干屑倒入慕斯框中,用勺子压平压实,放入冰箱冷藏20分钟左右;
  • 5.取过滤后的酸奶300g,与豌豆一同放在搅拌杯中,用手持搅拌棒搅打至细腻;
  • 6.泡软的吉利丁攥干水分,与细砂糖一同放入微波炉中加热至融化;
  • 7.融化后的吉利丁、糖液倒入酸奶中,继续用搅拌棒搅打均匀;
  • 8.酸奶溶液过滤,过滤出的渣滓去掉;
  • 9.从冰箱取出慕斯框,倒入过滤后的酸奶溶液,放入冰箱冷藏2个小时左右;
  • 10.一片吉利丁冷水浸泡,取150g酸奶与20g炼乳放在搅拌杯中;
  • 11.泡软的吉利丁微波炉融化,倒入酸奶中,用搅拌棒搅打均匀;
  • 12.取出已凝固的豌豆酸奶慕斯,倒入酸奶溶液,继续放回冰箱冷藏;
  • 13.大约2个小时后,慕斯已定型,用电吹风给慕斯框四周加热,可顺利脱模;
  • 14.2片谷优消化饼饼干30g,用擀面杖擀成细碎的饼干屑;
  • 15.蛋糕表面先用筛子筛上饼干屑,再用花版筛上少许的糖粉装饰图案;
  • 16.用勺子挖开的蛋糕是这样的;
