五香烤鸡
看着有网友做奥尔良烤鸡过程很讲究,但这个做法咱不会,我就会家常的做法,那就按照我喜欢的味道来腌渍烤制小鸡。
小鸡要买那种散养的,分量要净鸡在500g左右的最好。

Steps to make 五香烤鸡

  • 1.净鸡一只约750g,洗净备用。
  • 2.锅里倒入生抽、老抽、清水,料酒比例6:1:2:1。
  • 3.放入桂皮、八角、香叶,少许精盐大火煮开后关火,晾凉。
  • 4.把净鸡放入小盆内,撒上生姜片,把晾凉的料汁浇在鸡上。
  • 5.把小鸡反复翻腾几次,让料汁裹匀,最后用手按实浸泡3小时。
  • 6.把浸泡过料汁的小鸡捞出,控干。
  • 7.把准备好的小葱塞入鸡肚子里,最好是用小香葱。
  • 8.把水发的香菇塞到小葱的周围,按实。
  • 9.用牙签把鸡身上的开口缝好,最后固定在烤架上。
  • 10.把处理好的小鸡放入烤箱,温度200,时间60分钟,上管旋转烤。
  • 11.烤制60分钟后,取出烤鸡,抹香油或刷蜂蜜。入烤箱温度150,再烤制15分钟即可。
