Steps to make 千层饼

  • 1.用35度左右的温水将酵母充分化开,缓缓加入面粉中,一边加入酵母水一边用筷子搅拌成面絮。
  • 2.用手揉成光滑的面团,盖上盖子或保鲜膜醒发至两倍大。
  • 3.碗中放入玉米面、五香粉、盐搅拌均匀,锅中倒入食用油烧热,泼在玉米面上调成油酥。
  • 4.案板上撒少许面粉,用手揉出面团中的空气,根据面团大小切成合适的面块。
  • 5.将面团擀成长方形薄片,刷匀油酥,如图两边对称划四刀。
  • 6.如图从一边开始,两边向中间对折再向上翻折,重复对叠至另一边。
  • 7.最后两边包住口,擀成薄厚合适的饼胚。
  • 8.饼胚沾少许水,撒上白芝麻,再擀一下防止芝麻掉落。
  • 9.蒸锅中倒入水,饼胚放入笼屉,再次醒发。
  • 10.大火烧开,转中火蒸15分钟,焖2分钟取出凉一下。
  • 11.平底锅中倒入少许食用油烧热,放入蒸好的千层饼,煎至两面金黄。
  • 12.切成小块。
