海盐奶盖蛋糕卷(法帅蒸烤箱做法)
蒸烤箱很多人都说密封性太好,做不出蛋糕卷这类水含量比较大的甜点,小法尝试了多次之后,成功用法帅25升的蒸汽烤箱做出了美美哒的蛋糕卷~烤好的蛋糕卷,每个边边角角都是金黄色,中心部分也没有烤过头,不开裂。反过来毛巾面,细腻蓬松,颜色亮丽且平整的内层,像“毛巾”一样完美。跟传统奶油蛋糕卷不同的是这个里面的奶油加入酸奶口感细腻香甜好吃!超详细教程,一起动手吧!

  • 玉米油60克
  • 鸡蛋4个
  • 夹馅奶油100克
  • 细砂糖8克
  • 奶盖淡奶油100克
  • 酸奶60克
  • 海盐1克

Steps to make 海盐奶盖蛋糕卷(法帅蒸烤箱做法)

  • 1.先将鸡蛋分离,蛋清放入一个干净的打蛋盆里,打蛋盆必须是干净的无油无水的,蛋黄放入另一个盆里。
  • 2.把牛奶和玉米油混合在一起,用手动打蛋器打搅拌均匀完全混合好,混合到无水油。
  • 3.筛入低筋粉,用手动打蛋器将低筋面粉,搅拌到无干粉就好。
  • 4.把蛋黄倒入盆里,用手动打蛋器搅拌混合均匀就好,混合到流动性的蛋黄糊即可。
  • 5.蛋清打发至粗泡,加入3分之1细砂糖打发至稍微细泡。
  • 6.再加入另外3分之1细砂糖,打发到细腻的泡沫。
  • 7.再加入剩余的3分之1细砂糖和玉米淀粉,用低速打发蛋白霜,打发至湿性小弯钩即可。
  • 8.将打好的蛋白取三分之一到蛋黄糊里面,用刮刀以切拌、由下往上翻拌的方式,将蛋糕糊混合均匀好,混合到看不见蛋白即可。
  • 9.将刚刚混合好的面糊倒回蛋白里,将蛋糕糊混合均匀好,混合均匀即可,混合好的面糊是呈流动性的。
  • 10.28*28的金盘,先铺好油布或者油纸。
  • 11.再将面糊在离桌面20公分高的地方慢慢倒入金盘中,将面糊平均滩平在盘子里。
  • 12.法帅蒸汽烤箱先预热,蒸烤箱设置温度上下火150度,预热10分钟。预热好后再把蛋糕糊放入蒸烤箱内,上下火150度烤28分钟。
  • 13.时间到了出炉后拿出来,从20公分高处往下震两下,把里面的热气震出来。
  • 14.然后立即把蛋糕片移出金盘里,放到晾网上,把底下的油布撕掉,再在表面盖上一张油纸,将蛋糕放到完全凉再用。
  • 15.淡奶油加入细砂糖,用电动打蛋器中速打发,至有很明显的纹理。
  • 16.待蛋糕片晾凉后,切成4条,分别抹上奶油。
  • 17.再2条卷起来成圆柱形。
  • 18.淡奶油加入1克海盐和细砂糖打发至6成发,状态是稍微有点纹理流动性的。
  • 19.加入酸奶混合均匀。
  • 20.再把奶油淋在蛋糕卷表面,用草莓,蓝莓,芒果装饰,表面再筛上防潮糖粉即可。
