【冰皮月饼】---预热中秋
中秋临近,大家都开始忙活制作月饼了,原本对做月饼的热情度不是很高,耐不住布天盖地的诱惑,还是没能按捺住,几日前初试一把,外形相当惊艳,非常非常的喜欢!绿色是用朱师傅抹茶粉做的抹茶口味,粉色是用苋菜煮水调色,做出了粉嘟嘟的颜色,清爽怡人,很是喜欢!

Steps to make 【冰皮月饼】---预热中秋

  • 1.准备好所需材料
  • 2.将糯米粉60克、全部的粘米粉和澄面放入炒锅中,小火不停的搅拌炒至微黄熟透关火。剩余的20克糯米粉用同样的方法炒熟,放入容器中备用。
  • 3.在炒熟的糯米粉、粘米粉和澄面中加入糖粉搅拌均匀。
  • 4.再加入玉米油搅拌均匀
  • 5.锅中加少量水,将洗净的苋菜放入锅中,煮至菜汁很红后关火,用纱布过滤出菜汁。
  • 6.趁热将菜汁浇到炒好的粉中(菜汁的量没有称重,自己视情况添加),边浇边搅拌。,揉成软硬适中的面团,静置10分钟,使面团凉透,冰皮就制作好了。
  • 7.取25克面团,25克馅料,滚圆。(我用的是50克月饼模,馅料和冰皮的用量为1:1,月饼馅料选用的是“七式小包装月饼馅料”)
  • 8.将滚圆的冰皮用手捏成原片状,将馅料放在中间,收口,将馅料包住。
  • 9.月饼模具中倒入少量炒熟的糯米粉,晃动均匀后把多余的粉全部敲出。然后把包好的月饼球放进模具中。
  • 10.将模具倒扣在操作台上,用手掌轻压模具把手,压到头感觉压不动为止。
  • 11.11、双手拿起模具轻压弹簧,月饼就会轻松的脱模,一块漂亮的月饼就制作完成了。
  • 12.再看看抹茶的月饼吧!抹茶月饼:糯米粉45克(15克炒熟放模具中防粘用)粘米粉20克 澄面15克 玉米油10克 糖粉20克 牛奶115克左右,抹茶粉10-20克
  • 13.在炒好的粉中加入抹茶粉(10-20克,根据自己喜欢的颜色深浅决定),搅拌均匀。(炒制方法同粉色冰皮)
  • 14.加入玉米油搅拌均匀。
  • 15.牛奶加热至滚烫后倒入炒好的粉中,边浇边搅拌
  • 16.揉成软硬适中的面团,静置10分钟,使面团凉透,冰皮就制作好了

  • 18.看看我的双色月饼吧!自认为很美哦!方法超级简单,取10克左右带颜色的冰皮,滚圆放入模具中,用手指压平,铺满整个月饼模中的花片,再将月饼冰皮和馅料各减少5克,包好,放入模具中压出即可。(不需要压的太平整,铺满即可)
