芝麻红薯脆条
一款很香的硬脆口感的饼干条,黄油味混合着红薯香和芝麻香,用来磨磨牙挺不错,就是烤起来有点费时(烤的时间还与你的饼干厚度,红薯泥水份多少有关),做的时候做薄点会容易烤脆些。(方子来自烟火间)

Steps to make 芝麻红薯脆条

  • 1.红薯蒸熟后取75克压成泥放凉备用。
  • 2.冷藏黄油切小块,放入低粉中。
  • 3.用手或叉子把黄油和面粉混合成像沙粒状,注意不要让黄油融化。
  • 4.放入盐、糖、红薯泥。
  • 5.拌匀成面团,不要过度揉搓,静置15分钟。
  • 6.面团放入保鲜袋中擀开成约3mm的长方形薄片。
  • 7.可把面片冷藏至有点硬或冷冻一会儿,会容易整形,取出后,对中分开两份,每份切成均匀长条。
  • 8.整齐排到烤盘上,蛋黄打散后加一点水再打匀,在饼干表面刷一层蛋黄液,再撒上芝麻,烤箱175度约25-30分钟,烤好后不取出,在烤箱里至凉再取出。烤好的饼干是硬脆口感,如果还是软的,可再回炉用150度再烤几分钟至完全变硬脆。密封保存尽快吃完。
