抹茶红豆沙冰皮月饼
这是前几天做的冰皮月饼了,早就被消灭光光,我只吃过一个。现在一说到月饼就头痛,没有前两年的激情了。单单炒馅,就搭上半条命。买现成的馅省事好多,但是口感会大打折扣,DIY的乐趣也是在于折腾。亲们,没有烤箱也能做月饼哦!外面卖的冰皮月饼贵得离谱,还加了不少添加剂,吃了也不放心,而且馅料也偏甜,很腻,自己炒的馅可以控制糖和油的用量。

终于买到好的抹茶粉啦!以前买到的都是不黄不绿的土颜色,让我用一次伤心一次,只能看着人家绿绿地抹茶色流口水。结果我好久都没敢碰这东西,上次买了50G回来放到过期都没用,早就喂垃圾桶了。

卢宝贝看到这漂亮的月饼稀罕得不得了,动作超级的快冲过来就抓上一个,我承认我永远也没他动作快,没等我反应过来人家就已经咬上一口了,然后一把吐到地上说:“苦苦啊!苦苦啊!”我说:“苦就不吃了好不好,你换一个不苦的吃,这个给妈妈吃。”他不干,拼命护着不给我吃。然后咬一下吐一下,一个月饼就这么浪费掉了。完了还哇哇大哭:“吃啊!还要吃啊!”汗!其实大人吃没觉得苦,哈哈!

当抹茶遇上红豆后,绝对会碰撞出爱的火花。看着这一抹绿色,闻着抹茶淡淡的茶香味,很舒服很满足。其实红豆馅也是自己炒的,等下次再上传馅料的做法!我没少折腾,炒了四种馅料呢!

  • 糯米粉90g
  • 粘米粉70g
  • 澄面40g
  • 牛奶360g
  • 糖粉85g
  • 色拉油45g
  • 抹茶粉6g
  • 糕粉适量(炒熟的糯米粉)

Steps to make 抹茶红豆沙冰皮月饼

  • 1.在盆里倒入牛奶、糖粉、色拉油;
  • 2.用筷子搅拌均匀;
  • 3.倒入糯米粉、粘米粉、澄面,充分搅拌均匀;
  • 4.搅拌成均匀的稀面糊,过筛两次,静置30分钟;
  • 5.静置30分钟后,将盆放入蒸锅中,表面盖上保鲜膜,大火蒸约25分钟至面糊全熟。
  • 6.蒸熟的面糊,用筷子使劲的搅拌至顺滑,放冷后,即是冰皮了。
  • 7.冰皮冷却到微温后,加入抹茶粉;
  • 8.将抹茶粉和冰皮揉匀,即成为抹茶冰皮了;
  • 9.把抹茶冰皮分成25g的小份,揉圆,备用;豆沙馅也分成25g一个的小份,揉圆,备用;
  • 10.在手上拍点糕粉防粘,然后将抹茶冰皮放在手心压扁。放上一粒豆沙馅;
  • 11.用抹茶冰皮把豆沙馅包起来,慢慢往上推,直到把豆沙馅完全包裹住,收口,揉圆;
  • 12.在50g的月饼模具中撒点糕粉,让糕粉均匀粘在模具壁上,把多余的糕粉倒出来(这样可以 方便脱模),把包好的抹茶冰皮面团放进模具里面;
  • 13.压成月饼的形状,脱模即可;
  • 14.做好的抹茶冰皮月饼,放入保鲜盒内,放在冰箱冷藏保存,3天内吃完。
