玉子烧寿司

Steps to make 玉子烧寿司

  • 1.三个鸡蛋在碗里打散,想卷几卷就打几个蛋,我是做了三卷。
  • 2.火腿肠,小葱和胡萝卜切成碎末后加入蛋液中,加一小勺盐搅匀。
  • 3.我用的玉子烧锅,如果没有用平底锅也可以,小火热锅,锅里薄薄的抹一层油,倒入一大勺蛋液。
  • 4.轻轻转动锅使蛋液均匀的平铺于锅底。
  • 5.表面蛋液未完全凝固时就用铲子卷起。
  • 6.卷完后把玉子烧移至锅中间继续加热一会儿,使蛋液完全凝固,全程小火,按此方法做三个玉子烧。
  • 7.玉子烧晾至不烫手用竹帘整形,使其更圆。
  • 8.卷起玉子烧握圆定型。
  • 9.取一张海苔把整型完的玉子烧包住,剪去两边多余的海苔,剪下来的海苔也不要浪费,留着以后卷小卷时用。
  • 10.按此方法包成三卷
  • 11.米饭加入一汤匙寿司醋搅匀,没有也可以不加,主要是提味的。
  • 12.另取一张海苔剪成和玉子烧卷一样的宽窄,把米饭平铺在海苔上,注意只铺到三分之二处即可,这样正好能绕玉子烧一周,成品比较美观。
  • 13.玉子烧卷放在米饭的一端
  • 14.竹帘卷好拿起来用双手把卷握实。
  • 15.卷好的寿司用锋利的刀切成块,每切一块后刀都要用水冲干净,这样切出来的寿司才漂亮。
