    Steps to make 剁椒黄鸭叫

    • 1. 黄骨鱼适量,掐断鱼的下巴,用手撕开后摘去内脏和鱼腮后洗净备用。
    • 2. 朝天椒、大红椒、大蒜子和生姜各适量,分别切碎,全部切好后,混合在一起剁碎,装入盘中备用。剁辣椒适量,挤出水份后备用。
    • 3.锅烧热,下入适量猪油后化开,再下入剁好的辣椒和剁辣椒,小火煸炒,炒去辣椒中的水气,去除辣椒的燥性,炒出辣椒的香气。炒香后打出备用。
    • 4.盘底铺上少量泡软的粉丝,将黄骨鱼摆入盘中,淋入适量的啤酒,加入适量的盐,撒入适量的味精和鸡精,再淋入适量的蒸鱼豉油,最后将炒香的辣椒盖在黄骨鱼上。蒸锅上大气后,将黄骨鱼放入锅中,盖上锅盖,大火蒸8分钟。8分钟后将黄骨鱼取出,撒上葱花,美味即成。
