法式长棍面包(Baguette)是一种最传统的法式面包,营养丰富。法国面包的代表就是"棍子面包",baguette原意是长条形的宝石。法式长棍面包的配方很简单,只用面粉、水、盐和酵母四种基本原料,通常不加糖,不加乳粉,不加或几乎不加油

  • 1.将水和面粉放入面包机里揉均匀就好,放在面包机里面静置30分钟
  • 2.将酵母加入面团里面再揉均匀后,再放入盐揉匀即可
  • 3.将面团揉到表面光滑后,拿出来揉圆放在揉面垫上,基础发酵1小时
  • 4.一小时后再翻面,再发酵一小时
  • 5.基础发酵好了后,切成两份
  • 6.再用手轻拍出大气泡后,将面团由上往下折叠,然后醒面15分钟
  • 7.醒面好后再用手轻拍面团里面的大气泡,再上下面团向中间对折,用掌根压紧封口处
  • 8.将面团搓成长条,然后放在油纸上进行最后的发酵
  • 9.趁面团发酵的时候,把烤箱先预热上下火230度
  • 10.等面团发到2倍大好后,在表面割包,再散上黑麦粉
  • 11.将面团放入预热好的烤箱中层,先开蒸汽烘烤230度5分钟,再转上下火230度15分钟
  • 12.出炉后,放到烤网上放凉就好,烤好的法棍出炉那会会听到法棍在“唱歌”
