Steps to make 鲜虾玉子豆腐

  • 1.主料:玉子豆腐2条、鸡蛋3个、鲜虾5个。
  • 2.虾去掉虾头剥去虾壳(留虾尾),从后背刨开,把虾尾从中间穿过,稍稍整理成虾球。
  • 3.处理好的虾球放入碗中,加入一点点白胡椒粉、1克食盐、少许淀粉抓匀备用。
  • 4.玉子豆腐从中间切开取出,切成0.5厘米厚的片。
  • 5.切好的玉子豆腐平铺码入盘中。
  • 6.鸡蛋打入碗中,加入2克食盐充分打散。
  • 7.打散的蛋液到入铺了玉子豆腐的盘中,放入蒸锅,上汽后小火蒸10分钟。
  • 8.蒸制蛋液半凝固,把腌渍好的虾头部向外,尾部朝上放在蛋液中间,摆好后盖上盖子,小火蒸六七分钟即可。
  • 9.取出,撒上少许香葱末点缀一下,淋上蒸鱼豉油即可。
  • 10.成品。
