Steps to make 美味的【水煮鲈鱼籽】

  • 1.选用新鲜鲈鱼籽、小红椒(切成辣椒圈)、姜末、蒜蓉、肥肉(切片)各适量。
  • 2.锅里去少量的底油下入肥肉,小火慢慢煸炒。肥肉的油基本榨出(不要榨成油渣了)后,倒入姜末、葱花、红辣椒,小火一起煸香。要去除辣椒胡辛辣和炒出甜味,以及辣椒不失水份,需加入少量的水一起慢慢煸炒。
  • 3.当水份完全炒干及辣椒变色时下入鱼籽,加入一勺二锅头酒(要淋到鱼籽上),盖上锅盖焖15秒。
  • 4.15秒后打开锅盖,加入适量的水平到鱼籽,加入适量的盐、老抽、胡椒粉炒均。炒均后盖上锅盖,大火焖煮3分钟。
  • 5.3分钟后,打开锅盖,加入适量的鸡精、白糖,炒均后撒入葱花,即可起锅。
