Steps to make Pressed chives and eggplants

  • 1. Prepare the materials.
  • Cut the eggplant into four halves.
  • 3. Cut the chives into sections.
  • 4. Chop garlic into small pieces.
  • 5. Bring water to a boil in a pot, add eggplants, and steam over high heat for 8 minutes.
  • 6. Take it out and place it on the cutting board.
  • 7. Use a cutting board or heavy object to press on top, control the excess water in the eggplant, and press for 30 minutes.
  • 8. Chop the peppers, garlic puree, and salt together.
  • 9. Put some steamed eggplants in a sealed bottle first.
  • 10. Add some more leeks.
  • 11. Pour in some spices and a little Baijiu.
