Steps to make Fried Black Pepper Beef with Wudong
- 1. Cook frozen udon noodles until soft, boil the water and add the noodles. Cook until soft, and there is no need to let the water boil again. If it's overcooked, using a cold river can make up for it a bit.
- 2. Cut the fat beef slices of hotpot into small pieces (last night I had a few leftover slices of snowflake beef from hotpot, which happened to be disposed of).
- 3. Boil the noodles with the water we just cooked, just like how we boiled hot pot, for 10-20 seconds.
- 4. Add oil, stir fry chopped Dutch beans for 30 seconds, add some cooking wine and 1 teaspoon of sugar.
- 5. Add black pepper sauce.
- 6. Add the cooked beef and stir fry for 30 seconds until the meat is evenly coated with sauce.
- 7. Finally, add udon noodles and stir them with chopsticks to prevent them from breaking easily. After 40 seconds, all the sauce will be absorbed by udon.
- 8. Sprinkle green onions at the end.
