Steps to make Yam Lotus Seed Pagoda

  • 1. Raw material diagram
  • 2. Remove the shell and core of fresh lotus seeds (the lotus core is difficult to remove, so it is lazy), wash and steam in a steamer until cooked;
  • 3. Wash the yam, put it into a steamer, and steam over medium heat for about 20 minutes;
  • 4. After steaming the yam, take out the yam, remove the skin from the steamed yam, and then find a fine mesh (preferably a thin basket with medicinal properties) and invert it on the cutting board. Use a fine mesh basket to cover the peeled yam once, so that the texture of the yam puree will be very good!
  • 5. The high-quality yam puree is very delicate and elastic.
  • 6. After steaming the lotus seeds, take them out of the steamer and put them on a plate. Scrape off the yam puree from the sieve (you can add some white sugar and mix well, I don't like it very sweet, so I didn't add it again). Prepare a clean bowl and the ingredients for making the lotus seed tower will be ready;
  • 7. Take a clean rice bowl (the bowl should not be straight, as it is not easy to stack lotus seeds), and slowly overlap the lotus seeds around the bowl to create the shape of the lotus tower;
  • 8. Carefully place the yam puree in a bowl and gently compact it;
  • 9. Put the prepared lotus seed tower into a steamer and steam over medium heat for 10 minutes. This step is to make the yam puree and lotus seeds more compact and have a better taste;
  • 10. Put blueberry sauce and crystal sugar into a milk pot, then add a little hot water and mix well. Heat over low heat until the sugar melts and the blueberry sauce becomes a thin paste;
  • 11. Wash the mulberry leaves and let them soak in water for a few seconds, drain the water, cut off the petioles, and lay them flat on a plate;
  • After steaming the yam lotus seed tower, carefully remove it, then invert the bowl onto the mulberry leaves and drizzle with blueberry sauce.
