Steps to make 迷你小麻橢

  • 1.裹入面团:200g面粉,53g鸡蛋液+35g红糖用30g开水化开放至手温+熟油15g+温水用20g,2g酵母和成光滑面团。或者把液体换成鸡蛋,会更膨松。红糖换白绵糖,甜度会增强。
  • 2.和好的面团盖保鲜膜放温暖处省发。
  • 3.包皮:100g面粉加50g水和成白色面团。可以减量,实际用80g面粉加35g水就够了。
  • 4.面团发酵。
  • 5.面团中充满气孔。
  • 6.面案上洒些面粉,不要多揉,拉伸成长条按扁就行。
  • 7.白色面团滚成圆柱状,按扁,用擀面杖擀成长方形,要比刚才的红糖面团宽些。面案上要洒面粉防粘哦。
  • 8.修掉边角,在白色面皮上刷薄薄一层水,使红糖面团更好贴合。
  • 9.在红糖面团上刷薄薄的一层油。
  • 10.对折,整体压一压,边口尤其要压实。
  • 11.切一指宽的剂子。可以沾点面粉,放一边省一省。一般做的个头约10公分大,厚度是一样的。
  • 12.油五成热下锅,保持小火慢炸。中间要注意翻动,使其两面受热均匀,膨发效果好。
  • 13.红糖上色快,观察白色皮变黄就可以捞。
  • 14.因为厚,所以炸的时间长。
  • 15.出锅。
  • 16.内部松软,外皮酥脆的迷你麻椭。
