爽口小凉菜------------【香辣豌豆凉粉】
凉粉我家经常做,只是没拍过照,觉得太简单的东西,好像没必要一样,其实越简单人们更喜欢,不需要太复杂的技术,真的是零失败。以前经常是做红薯凉粉,它的口感也不错,好像豌豆凉粉比红薯凉粉口感更劲道,所以这次跑到华南海鲜市场去买的豌豆淀粉,有一家卖五谷杂粮的店子,他家什么粗粮都有,还有调料,这次只是试探着问一下有没有豌豆淀粉,没想到真的有,很兴奋,马上称了一斤,回家就开始做,做出的成品不错。

   有的人是开水下淀粉水,我的方法是冷水入锅,再开始中小火加温,不停搅拌,做出的凉粉一样Q弹有劲,这两种方法我都试过,开水入锅淀粉水就会形成很多疙瘩,搅不开,一般新手没做过,会手忙脚乱,如果凉水入锅,就不会出现那样的情况。

  • 味极鲜酱油1勺
  • 香醋2勺
  • 香辣豆豉酱2勺
  • 自制辣椒油2勺
  • 香油1勺
  • 少许
  • 白糖1勺
  • 胡椒粉少许
  • 鸡精少许

Steps to make 爽口小凉菜------------【香辣豌豆凉粉】

  • 1.准备好原料
  • 2.1碗豌豆淀粉,用等量的水调匀,放置5分钟;
  • 3.锅中放入5碗水,把调匀的淀粉水倒入锅中
  • 4.开中小火,不停地搅拌;
  • 5.这时锅中的淀粉水成半透明状,还不是很粘稠
  • 6.不停搅拌至透明状,并且锅中有大气泡翻腾;
  • 7.用锅铲舀起,凉粉糊不断链,就说明做好了
  • 8.把凉粉糊盛入保鲜盒中,放凉后入冰箱冷藏2小时;
  • 9.花生豆放锅中炒熟
  • 10.放凉后去皮,用擀面杖擀碎;
  • 11.大蒜去皮切碎
  • 12.把大蒜放入碗中,放入香醋,味极鲜酱油,辣椒油,香辣豆豉酱,香油,白糖,胡椒粉,鸡精搅匀备用;
  • 13.冷藏好的凉粉取出倒扣
  • 14.切成条(粗细自己决定);
  • 15.黄瓜洗净切成和豌豆粉等量的长度
  • 16.碗中放入一层豌豆粉;
  • 17.再摆入黄瓜条
  • 18.上面再放入豌豆粉;
  • 19.把碗中调好的料汁一部分倒在上面,摆上黄瓜花;
  • 20.撒上花生碎,再把剩余的料汁倒在上面,端上桌开吃吧!
