香酥炸虾排

Steps to make 香酥炸虾排

  • 1.尽量选用个头大一些的海虾,吃起来口感比较饱满,个头太小炸出来肉质会发干。
  • 2.大虾清洗干净,剪去虾头,去掉虾身的壳,留下虾尾。将虾从背部中线剖开,注意不要切断,使虾呈蝴蝶状,剃去虾线。加入适量料酒和食盐,抓匀腌压制半小时。
  • 3.用肉锤轻轻地将虾肉砸扁,要两面均匀的慢慢砸,千万别太用力把虾砸烂。
  • 4.准备好面包糠、玉米淀粉,鸡蛋打散。
  • 5.虾肉过三关:先均匀地裹上一层淀粉,拍去表面多余的淀粉,再裹一层鸡蛋液,最后轻轻按压沾满面包糠。
  • 6.做好的半成品包好保鲜袋,放在冰箱冷冻室里保存,吃的时候无需解冻,直接下油锅炸制。
  • 7.锅中加油,烧热,中小火慢慢煎炸。
  • 8.两面来回煎炸,虾肉熟透后把火开大一些,可以逼出虾排里的油脂。
  • 9.放在吸油纸上再吸取一些油脂。
