Steps to make 极具丝滑的鸡蛋羹

  • 1.鲜鸡蛋四个。
  • 2.加入与鸡蛋同量的清水和两克盐,打开至均匀(喜欢吃嫩一点的可以多加一点儿水)。
  • 3.将打均匀的蛋液过细纱网,滤去蛋液中的絮状物(这一步很重要,决定着蛋羹是否丝滑、细腻。没有细纱网也可以用屉布或丝袜代替)。
  • 4.经过滤的蛋液(有沫的话要撇掉)明显细嫩了好多。
  • 5.用保鲜膜封住,但要用牙签在保鲜膜上戳五、六个小洞。这样做是为了不让蒸馏水滴到蛋液上。一切准备完全后,就可以上锅蒸了(蒸锅水开后,将蛋液放入。视份量多少,蒸六至十分钟即可。)
  • 6.这是鸡蛋和清水按1:1的比例蒸出来的,个人觉得有点老,所以建议您做的时候可以再多放一点儿清水。好了,如果这个能蒸成功的话,那就可以在里面加入喜欢的食物或卤汁,制成更多风味独特的美味了(比如:蟹肉、带壳蚬等等)。
